Maui Life

 

My favorite beach to enjoy on any day is Ho'okipa on the northshore. Well really any beach is great in Maui but we live only 10 minutes from here and it's perfect for kids. There's tide pools, seashells, and almost every time we've gone, the honu beach it and you can get a good look at em. They're huge. Another reason to enjoy Ho'okipa is the awesome surf. On days when I'm stuck at home I day dream about going to Ho'okipa haha.

 

 

 




DinnerTime Smoothie

Always eat as much raw food as possible. Ripe organic fruits and vegetables are always the best foods to consume. It's what we are designed to eat.
My dinner tonight, and many nights, is a big smoothie. I'm talking about a minimum of 36 Oz to fill your cup. You can see in the pic I had more than fit in my jar and that's ok. I just filled it up after. I was full off my smoothie and did not crave a dessert because of the sugars in the fruit. Afterwards I feel light. Never heavy and bloated like you can feel after eating a cooked meal.
The recipe I used for this smoothie…
- 2 Lg Bananas
- 1/2 lb strawberries with green tops left on
- 1C pineapple
- 2C spinach
- 1C frozen peaches
- 1TB chia seeds
- 1tspn spirulina
- 1C fresh coconut milk
- all blended until smooth

Healthy Gluten-Free Vegan Chocolate Chip Cookies

Seriously, who doesn’t LOVE a good chocolate chip cookie?? I know WE DO! Everyone but Penny and only because she hasn’t had one yet but I’ll try to keep that day far from now. TRY! May be hard with Piper around…and this blog, because I know it’s going to make me want to bake more and get some good recipes for you all! But the good news….

THESE COOKIES ARE HEALTHY!! ANDDDD DELICIOUS!!

I totally threw this recipe together so quick last night that I was nervous they wouldn’t come out good, but I couldn’t believe how great they tasted. Piper fell asleep before they were done and as a treat, I let her have 2 for breakfast.

Ingredients:

- 1/2 medium apple (or 1/3C unsweetened applesauce)

- 1/2 lg banana

- 1/4C + 1 TB coconut oil

- 1 1/3 C GF all purpose flour

- 3/4C Coconut Palm sugar

- big dash of cinnamon

- 1 tspn baking soda

- 1 tspn vanilla

- 2 TB coconut milk

- 3/4C vegan chocolate chips

DIRECTIONS:

Preheat oven to 350. I used my blendtec all mighty blender for this recipe, adding to the blender bit by bit.

First I blended the apple. It was a little dry so I added 1 TB apple juice (organic, not from concentrate) it looked like this…pretty chunky!

then I added the remaining ingredients minus the chocolate chips…and blended

the batter was thick and delicious! I might attempt more recipes based just on the dough itself it was so good!

next, stir in the chocolate chips.  Roll dough in 1-2 in balls and place in greased cookie sheet.

you can actually see the chunks of apple in the dough. YUM!!

Bake for 8-9 minutes.

Gluten Free Vegan Black Bean Brownies

Our family has only been vegans now for 3 months. I have learned so much about food the past few years it’s only natural that this transition has taken place. My 4 year old daughter has severe eczema and through our process of elimination diets as well as our desire for overall health, we decided as a family that veganism was the best way go.

I have always had a love for baking so I can’t wait to modify my SAD (standard american diet) desserts into healthy, gluten free, and vegan recipes so we can still enjoy an occasional treat

I know, I know you’re probably thinking, BLACK BEAN BROWNIE?? haha. I swear you can not taste the beans! These are very good!!
Preheat oven to 350
Ingredients…
- 1 can (15oz) Organic, salt free black beans, drained and rinsed
- 1/4C coconut oil
- 1/3C organic unsweetened apple sauce
- 4 TB raw cacao powder
- 1/2 tspn baking powder
- 2 tspn pure vanilla
- 1/3 C coconut palm sugar
- 2 TB GF oats
- 1 C vegan chocolate chips
(I used ghirardelli semi-sweet)

Blend in high speed blender or food processor all ingredients except chocolate chips. Stir in chocolate chips and pour batter into greased 6″ x 8″ baking dish. Top with extra chocolate chips too!  Bake for 32-38 min.

I love how these brownies taste but I think cooled, and chilled in the fridge overnight was even better! Almost like a fudge bar! OMG!

Orange Mango Peach Green Smoothie

I hope you enjoy green smoothies as much as I do. I have one every day. Sometimes I have 2! or 3! haha.

They are so good for you and the more you enjoy them, the more you grow to enjoy the flavor of greens.

Recipe for todays smoothie:

- 1 orange (peeled)

- 2 champagne mangos

- 1/2 bunch of kale (or you could sub any greens you prefer)

- 1C frozen peaches

- 1/2C-1C water or coconut milk (or milk of choice) but not cow’s milk, that’s just gross!

Todays add-ins..
- 1 TB chia seeds
- 2 TB hemp seeds
- 1 tspn spirulina

blend and enjoy! yum.
