
Seriously, who doesn’t LOVE a good chocolate chip cookie?? I know WE DO! Everyone but Penny and only because she hasn’t had one yet but I’ll try to keep that day far from now. TRY! May be hard with Piper around…and this blog, because I know it’s going to make me want to bake more and get some good recipes for you all! But the good news….
THESE COOKIES ARE HEALTHY!! ANDDDD DELICIOUS!!
I totally threw this recipe together so quick last night that I was nervous they wouldn’t come out good, but I couldn’t believe how great they tasted. Piper fell asleep before they were done and as a treat, I let her have 2 for breakfast.
Ingredients:
- 1/2 medium apple (or 1/3C unsweetened applesauce)
- 1/2 lg banana
- 1/4C + 1 TB coconut oil
- 1 1/3 C GF all purpose flour
- 3/4C Coconut Palm sugar
- big dash of cinnamon
- 1 tspn baking soda
- 1 tspn vanilla
- 2 TB coconut milk
- 3/4C vegan chocolate chips
DIRECTIONS:
Preheat oven to 350. I used my blendtec all mighty blender for this recipe, adding to the blender bit by bit.
First I blended the apple. It was a little dry so I added 1 TB apple juice (organic, not from concentrate) it looked like this…pretty chunky!

then I added the remaining ingredients minus the chocolate chips…and blended


the batter was thick and delicious! I might attempt more recipes based just on the dough itself it was so good!

next, stir in the chocolate chips. Roll dough in 1-2 in balls and place in greased cookie sheet.

you can actually see the chunks of apple in the dough. YUM!!
Bake for 8-9 minutes.

This recipe made a perfect dozen cookies.
